It all has to do with grilled chicken pieces in a rich tomato-based sauce for a meal with an amazing flavor that you will want to eat again and again.
Serve it with rice for a wonderful meal full of flavor!
CHICKEN TIKKA MASALA:
- 2 tablespoons oil
- 1 large onion, finely chopped
- 1 tablespoon tomato puree, tomato paste
- ¼ a cup of canned tomatoes or 2 medium tomatoes, finely chopped
- 1 teaspoon lemon juice
- 2 teaspoons tika masala mixture (optional)
- ¾ cup fresh cream
- γ teaspoon garam masala (optional)
- Salt
- Water
- rice, for serving
Instructions
- Place the chicken pieces in a large bowl. Rub with lemon juice and enough salt. Marinate for 10 minutes in the fridge.
Meanwhile, place the tika masala, garam masala, and yogurt mixture in a blender.
- Mix well. Add this paste to the chicken bowl. Add oil and mix well. Marinate for at least 30 minutes or overnight if possible.
- When ready, preheat the grill. Cut the chicken pieces into skewers. Grill, turning occasionally, for 15 - 20 minutes or until cooked through. Remove the chicken from the skewers. Set them aside.
- Meanwhile, heat the oil in a large pan over medium heat. Add onions. Saute for 2-3 minutes or until lightly browned. Add the tomato paste and fry for a few seconds. Now add the tomatoes. Saute until soft and fluffy. Bring to the boil, lower the heat and simmer for 2-3 minutes.
- Add lemon juice and sour cream. Add enough water to make a thick sauce. Season with salt and pepper. Simmer, stirring occasionally, for 3-4 minutes. Add more water if needed.
- Stir in the grilled chicken. Serve with rice.
