Ingredients:
1 1/2 cups sugar
1/2 cup sour cream, at room temperature
1 tablespoon unsalted butter, at room temperature
1 tonka bean
Instructions:
1. When working in batches, sprinkle a thin layer of sugar in a large saucepan and place over medium-high heat.
2. Once the sugar layer has turned into transparent beads, sprinkle a little more sugar on top. After repeating it several times, you will see that the sugar becomes more and more fluid.
3. Once you have melted enough sugar to cover the bottom of the pot, slowly add the rest of the sugar to the pan and as it heats up, it will start to get a darker color.
4. Then pour the cream into the pan while stirring. The mixture will swell slightly. Once lowered, remove from the heat and add the butter. Stir until incorporated and add the tonka bean.
5. Once cool, remove the tonka bean.
Store in a container or jar for use.
