Spice, the ambassador of spices.
The spice has given its name to a whole category of materials.
It combines tones of pepper, cinnamon, clove and nutmeg, hence its name in English "allspice", meaning "all spices together".
Spice is the only spice that came from the West, when the followers of Columbus, making the same mistake, went to India from the west and constantly encountered new lands of Latin America. One met the Jamaican, (native to the Greater Antilles, southern Mexico and Central America) where the round seed of our stews and minced pasta comes from.
In Greece, spice is limited almost exclusively to braised, while it could give its aroma to many other dishes. Its use in some breads, in white cooked, in baked goods, such as chicken, gives delicious results. In some cases it is good to crumble, so that less than one spore enters, since its smell is strong.
We can even incorporate it in sweets that contain honey.
Suitable for chocolate and coffee. in hot ginger bread, cookies and mulled wine,
Add a pinch of powdered allspice to most fruit cakes and cookies.
Spice is one of the most essential ingredients for making pickles.
Add whole grains of spice to your vegetables or grated spice to chutney or other pickles and sauces.
Add to the pepper mill along with the pepper and a few spice grains to get the pepper a different, very spicy taste.
Add a few spices to the marinade for the meat.
In Jamaica and the West Indies they use spice in soups, roasts and curry foods.
Also, grated spice gives a very spicy aroma to potpourri with cinnamon.
It is still used, in the form of essential oils, in the manufacture of men's perfumes and soaps.
