Porcini are wild mushrooms with a delicate woody taste.
They are visually similar to Portobello although they are usually a little smaller and are distinguished in many different species. That is why Porcini mushrooms can differ in size and color. They go well with salads of all kinds, where you will use them lightly cooked or boiled and finely chopped. Their delicate taste stands out perfectly in a classic risotto
Wild mushrooms with irresistible woody taste and slightly reddish color, which you will use dried, following the recommended wetting procedure. They make a perfect risotto and go extremely well with both noodles and spicy vegetables as well as seasoned cheeses.
Remember to sauté / cook mushrooms in light olive oil or vegetable oil (eg sunflower oil) or low-fat butter or margarine. This is because heavy blends work negatively on their fragrances, overlapping their velvety bodies.
Mushrooms do not need much cooking time. Prefer sautéing for a few minutes.
