This medium-sized annual can boast of the great Greek capital in its history, but today we use its seeds only to season the pastourma with their characteristic aroma.
There were times when the Greek fields met the huge demand of the Roman Empire for its seeds and dry grass.
This is also underlined by the English name "fenugreek" which comes from the Latin "foenum graecum", meaning "Greek hay".
In ancient times, ground buckwheat seeds were considered appetizing and tonic, as they are rich in iron and have a high protein content.
Gives the characteristic note to the curry, but which is usually contained in an excessive degree.
If we learn to make proper and measured use of its seeds, it will make us love it.
Whole seeds need to be carefully roasted over low heat for just a few minutes.
This is the only way to release their warm aroma and taste, which is reminiscent of something between burnt sugar and celery.
Also much easier to beat them in the mortar or grind them in the coffee machine, if we want to use their powder.
Whatever recipe we add to them, it needs to be sparing so that it does not become bitter.
Use them in soups, scrambled eggs, salads with onions or potatoes, in yogurt sauces and in lemonade.
It is also meant in the mixture to make pasturma.
