

Indonesian cinnamon is sold in bobbins, but it consists of a thick layer capable of destroying a spice or coffee grinder and in no case breaks easily by hand.
The annual world production of cinnamon and cassia is 27,500 to 35,000 tons.
Ceylon cinnamon numbers 7,500 to 10,000 tons of production with the rest being produced by other species.
Of the remaining 20,000 to 25,000 tonnes, Indonesia produces about two-thirds of the total and the rest is produced by China with significant production and finally India and Vietnam with low production.
Cinnamon is widely used in cooking, confectionery for its wonderful taste and aroma, it is used in liqueurs, drinks, ice cream, sweets, three meat products, spices, chewing gum, toothpastes, etc.
It is the second spice in motion worldwide after Black pepper.
Cinnamon is a powerful antiseptic, but we can also pleasantly perfume our space with it, either by putting cinnamon sticks on the radiators in winter or by boiling it, plain or with other spices, e.g. carnation.
